Quick and easy way to get lots of nutrients in one meal that will help fight eye disease.
Ingredients:
Riced Cauliflower (use a food processor to rice the cauliflower)
Veggies of your choice. You can use Brussels, purple cabbage, turnips, beets, red potatoes, onion, sweet potoato, zucchini, squash, or anything you want.
Olive oil
Salt and pepper or choice of seasoning
Avocado
Lemon tahini dressing (use a store bought kind to make it easy)
Egg
Instructions:
Preheat oven to 400 degrees
Place the veggies on a sheet pan and drizzle with olive oil and seasoning and toss a bit to coat
Roast the veggies for 40 mins or until desired tenderness
Cook the cauliflower rice in a frying pan with a bit of olive oil and choice of seasoning
Plate the cauliflower rice and fry you egg in the same frying pan
Add the veggies to your bowl and top with egg and avocado
