3/4 cup cooked quinoa
1 1/2 cups chopped kale
Couple tablespoons of diced avocado (as much as you would like)
4 Tablespoons mushrooms diced
2 Tablespoons lemon juice
1/2 teaspoon fresh parsley
Salt and pepper to taste
Add quinoa, avocado, and kale and mix
Pour the oil and lemon juice on top
Sprinkle with parsley, salt, and pepper.
