1very ripe banana
1/4 cup almond butter
2 Tbsp coconut milk
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract
Coconut oil is great for cooking in with lots of healthy nutrients
Mash up the banana and almond butter in a bowl. Then add your eggs and milk and mix. Now add the rest of the ingredients. The batter will will by very thin. Heat your skillet or griddle. Melt a tablespoon of coconut oil and pour the batter in. Once you see bubbles in the center of the pancake flip to cook the other side. You will need to add more coconut to the pan as you go.
Top your pancakes with berries for an added nutritious boost.
